Can you clean up prior periods?

Often, yes. Cleanup is scoped separately after reviewing the condition of the file, the number of accounts, the periods involved, and the supporting records available.

Is bookkeeping included with tax preparation?

Routine monthly bookkeeping is a separate service. Limited tax-return adjustments may be part of preparation, but a materially incomplete or inaccurate accounting file can require a separate cleanup engagement.
